We had a really great time on Saturday as we played games that I received for free in exchange for my review. We had lots of laughs and good refreshments. The game we played was from @theopgames which was given to me to try. The games we played were "What the Cup" and "Telestrations" Our favorite was Telestations. Momma's Tomato Soup Cake


I am going to share one of my very favorite holiday recipes in the world!




My Momma use to make this for us every Thanksgiving and Christmas. The only thing that I have changed is that I use dried fruit instead of candied fruit.  In fact, after I started using dried fruit in the cake my Momma did too. :) My mother is now gone, so now I try to carry on as many as I can of my Momma's traditions. Now, my three beautiful daughters are carrying out many of their Grandmas traditions for their families. I am so very proud of my daughters. They have given me 15 wonderful grandchildren. These are also wonderful to give as a gift, IF you can keep your family from eating them all.


 Here is another fact about this cake, it DOES NOT taste like it has tomato soup in it. It also does NOT contain either milk or eggs in the cake it's self. You can use any liquid of your liking in the icing.

Tomato Soup Cake
(No eggs or milk)

Pre-Heat Oven To 350 degrees

2 Cups Flour                              1 Cup Sugar
         1 teaspoon cinnamon                    1 teaspoon allspice 
                          1 teaspoon nutmeg                       1/2 teaspoon of ground cloves


Sift dry ingredients into a large mixing bowl.
Next:
Put 1 teaspoon baking soda into a regular size can of Tomato Soup. (do not pour into a bowl before mixing) Now mix the Tomato Soup and baking soda together in the soup can but hold over the mixing bowl with the dry ingredients in it, because it will grow. (I always called my children in to watch the Tomato Soup grow, just as my momma did to us kids. We always said "Do you want to see momma do magic? LOL and the kids LOVED it.)  Use a spatula to get all of the Tomato Soup mixture out of the can and into the mixing bowl. Now add 1 cup Oil (I like using olive oil, but any cooking oil that you like will do).  
Mix well. 

Now add 1/2 cup -1 cup of your favorite nuts (you may omit nuts if you like)
Next add about 1/2-1 cup candied fruit OR chopped dried fruit.  
Or you don't have to add nuts or fruit to the mixture. It is just to your taste and imagination. 

Mix very well.

Prepare you pan as you would for any cake. I like using the old fashioned copper wreath shaped cake/jello pans for a festive feel. I like using the the ring/wreath shaped cooper pan that has a design on it and little round indentations that are the perfect size to put candied cherries, fresh pitted cherries or maraschino cherries. Or you can use loaf pans of any size or cupcake pans or any baking pan of your choice. If you are using cupcake pans, I suggest using the cupcake pan liners that are metallic with a paper inside of them. Spray the paper with pan spray(butter flavored is the best for this). They are making all kinds of wonderful cupcake pan liners these days, so let you mind and imagination go. 

Now pour the cake mixture into the prepared pan you will want to leave a little room for it to rise but that amount of room will depend on your choice of baking pan.(I suggest making a trial one first if you are planning on using this cake for a special occasion, so that you can figure out how much to put into your cake pans)  Bake until you can stick a toothpick into the center of the cake and it comes out clean.  I am not able to give you the exact time to bake the cake because it all depends on the pans that you use. I would start checking the cup cakes after 15 minutes and other larger baking pans after half of an hour or 45 minutes. (it just depends on the size of the pans) The toothpick will come out clean when the cake is done. Use a CLEAN(new) toothpick each time you check to see if it is done. 

While the cake is cooking mix powder sugar and milk together(you may add any flavored extract that you like, I like using almond in mine.) The amounts is up to you. Just remember you do want it pretty thick, and it doesn't take much liquid to mix in with powder sugar to thin it, so just add a little liquid at a time. I start with what ever flavoring extract I am going to use, then use milk to finish getting it to the right consistency to drizzle over the cake.  I usually make up a lot of this icing so that I am sure that I have enough for the entire cake. You do NOT want to have to little of the icing and it just depends on how much you want to use on each cake.

When the cake is finished cooking, take out of the oven. Next un-mold the cake to either a dish(drizzle small amount of icing on the the dish to keep the cake in place) or a cooling rack(with wax paper or something under the rack to catch drippings of the icing.) With cupcakes I suggest putting them on a rack to ice. Now is when it is time to ice the cake/cakes. You ice them while they are fresh out of the over. If you are using the pans with the little indentations, put your choice of cherries or what ever you would like in the holes now or immediately after you drizzle the icing on. If you put them on before icing the rest of the cake, then put a little icing to hold them in the holes. Now ice the cakes..if you want to decorate these more you can use candies or the little candy decorations that they make for cakes and cup cakes.

Now let cool and when cooled enjoy.




Note:
 You may substitute any liquid of your choice for the milk in the icing. Soy milk, almond milk, etc or brandy or fruit juice. You may add food coloring to it too..just remember if it is a liquid you are adding, it will make it thinner, so add the food coloring before the main liquid.
